Tasting Notes

Dell'Orto PDO opens with deep green aromas of olive leaf, grass, and unripe tomato. Notes of cardoon and fresh herbs follow, supported by a pronounced bitterness and a persistent refined spice. This structure is a hallmark of polyphenol rich oils and a clear expression of its protected origin.

This is not a background oil. It is a deliberate choice.

Olive Varietals

Dell'Orto PDO is produced exclusively from Carpellese, a native olive variety central to the Colline Salernitane designation.

Carpellese delivers structure, pronounced herbal character, and a firm bitterness balanced by an elegant peppery finish. The result is an oil shaped as much by geography as by tradition, reflecting the soils, climate, and centuries-old practices of southern Italy.

How to Use It

This is an olive oil intended for dishes where character and structure matter.

Finish over grilled meats, roasted vegetables, and legumes. Pair with aged cheeses and rustic breads. Drizzle on Mediterranean dishes that benefit from depth and bitterness. Use sparingly as a finishing oil to highlight flavor and texture.

The PDO rewards restraint. A small pour says more than a generous one.

Our Story

The Colline Salernitane PDO designation exists to protect something rare — an oil that could only come from one specific place on earth. The soils, the climate, the native Carpellese olive variety, and the centuries of accumulated knowledge that shaped how they are grown and pressed.

Dell'Orto has been part of that landscape since 1870. Polidoro and Sergio Dell'Orto are the fourth generation to tend these groves. The PDO certification is not a marketing credential. It is a legal guarantee of origin and method that most olive oils in the world cannot claim.
