Dell'Orto PDO opens with deep green aromas of olive leaf, grass, and unripe tomato. Notes of cardoon and fresh herbs follow, supported by a pronounced bitterness and a persistent refined spice. This structure is a hallmark of polyphenol rich oils and a clear expression of its protected origin.
